Simple grilled goodness. That is what this tomato recipe is all about.
Before heading outdoors to fire up the grill, chop 2-3 garlic cloves (to taste) and sauté them in 3 tablespoons of olive oil until the flavors are released (your nose will know) and the garlic is lightly golden. The small pan you use for the garlic will be the only one you will wash for this recipe...that alone should make you want to try it!
Simply slice the tomatoes in half and drizzle with olive oil and sprinkle on some salt/pepper and chopped fresh thyme. Place them cut side down on the grill, close the lid, and cook for 3 minutes. Turn them over and add a spoonful of the garlic oil onto the tomatoes. Close the lid again and cook another 3 minutes. Sprinkle with shredded Parmesan cheese. Feel free to close the lid for about 30 seconds to help melt the cheese. The day we prepared ours, not only was cheese being sprinkled, but so was the rain, so we skipped this step.
