The inspiration for this recipe came from the muffins shown in my Cranberry Craze post last fall. I went with seasonal blueberries this time, to savor the flavor of summer and added an orange glaze to the top.
Definitely a great way to start a summer day!
Start by mixing one package of Blueberry Muffin Mix according to the package directions. Discard canned blueberries included in the package or use for something else. Replace the water the mix calls for with orange juice and add two tablespoons of orange zest.
Going shirtless and braving Batman undies is up to you!
Next, add one cup of fresh blueberries and gently fold them into the batter.
While the liners are being
crammed placed into the muffin tins, mix together one block of softened cream cheese and 1/4 cup of sugar. Fill the muffin tins with one inch of batter. Drop one heaping tablespoon of the cream cheese mixture into the center of the batter. Evenly distribute the remaining batter to the muffins and bake according to the package directions.
Let the muffins cool completely, while you prepare the orange glaze.
The glaze is made by mixing together- 3/4 cup of powdered sugar and 3-4 tablespoons of fresh orange juice until you have the right consistency. Drizzle over completely cooled muffins.
